The story
Nobody leaves Multan without a tin of sohan halwa. It is a firm, caramel-like sweet cooked in ghee and topped with almonds and pistachios.
It travels well, keeps for months in its tin, and is a standard gift for relatives in other cities and abroad.

History
Sohan halwa is Multan’s signature sweet, and old-city shops have made it the same way for generations.
How it’s made
Milk, sugar and flour, traditionally from sprouted wheat, are stirred in wide pans.
Ghee goes in slowly as the mixture darkens.
It is stirred until it thickens and pulls away from the pan.
It is poured into discs and topped with nuts.
Discs are packed into round tins.
Kinds
Chewy and fudge-like.
Brittle, like a nut toffee.
Heavier on almonds and pistachios.
In Pakistan
Given at weddings, carried to relatives, and eaten with tea through the winter.
